Nadia’s Kulich ~ Russian Easter Bread

Happy March everyone and because Easter is just 22 days from today I wanted to post the recipe I promised for my mother’s Russian Easter Bread, Kulich. The big question is…will ellen b. finally attempt making it this year??? We’re off for our beach walk and had a very busy day yesterday so I hope to get around to blogs later and a post about my Friday.

I promised my mom’s recipe for Kulich. Now what you need to know about my mom and recipes is that she ends up tweaking them from year to year so this recipe is the last written down recipe for her Kulich from 2001.

Ingredients:

16 egg yolks
4 eggs
5 C. sugar
1 quart whipping cream
1 quart half and half
1 T. salt
5 cubes butter ( 2-1/2 cups )
1/2 C. oil
1 shot apricot brandy
6 teaspoons powdered vanilla
Zest of 2 lemons
8 pkgs rapid rise yeast
1 T. sugar
1 Cup water and 1 Cup milk
About 10 lbs of flour

Of course most of you will need to cut this recipe in half or quarters cuz this is enough for an army (my extended family)

Add yeast to the cup of water and cup of milk. Make sure the liquids are lukewarm. Let this mixture dissolve and sit. In the meantime beat the eggs, only use a stainless steel bowl. (because mom says it will work better that way). Now add the 1 T. of sugar into the yeast mixture and stir to dissolve.

Cream the butter and sugar. Add the eggs to the butter and sugar mixture and mix to combine. Mix the half and half with the whipping cream and heat until lukewarm. Add the half and half mixture to the eggs. Mix in the vanilla and brandy. Add the yeast mixture and the salt and beat with a mixer. Continue beating and add the lemon zest. Continue beating and add the flour about a cup at a time. Once you cannot beat the dough any longer, put the dough on a floured surface and start incorporating the flour by kneading the dough. The dough should be kneaded very well approximately 10 minutes. You should knead the dough until you can cut it with a knife and it is smooth without any holes. Place the dough in a stainless steel bowl. Take some oil and pour a little on the dough and spread it all over the dough. Make sure to turn the dough so it is coated evenly. Cover with plastic wrap right on the dough and a dish towel on top of that. Place in a warm place away from drafts to rise. (My sister usually puts it into the oven that has been warmed slightly.

It is now time to prepare the coffee cans (1 lb. and 2 lb. cans are the best) Cut circles the size of the bottom of the cans out of wax paper. You will need four circles per can. Make sure the cans are well greased. Put the 4 circles in the bottom of the cans.

 

Use a empty and clean coffee can like the one above. Take the label off. You’ll need to use a can opener to cut the lip off the can. I hope these pictures will make the process easier to understand.

Cut sheets of wax paper long enough to line the sides of the can and tall enough to be 2″ above the rim of the can. Use crisco to seal the ends of the paper.

Here’s a can with the bottom and sides lined with the wax paper.

When the dough has doubled in size, punch it down and turn it over. Let it rise a second time until it doubles in size. Punch it down again. You will take a portion of dough about 1/3 the size of the can. Knead it and form it into a smooth ball that you can easily drop into the can. Let the dough rise again inside the can until it is at least double in size. Bake in a 350 degree oven until golden brown on top. Let them cool slightly in the cans. Remove them from the cans and then cool completely on their sides. Cover them with a towel and turn them several times so they keep their shape.

Pasta Carbonara ~ Recipe

 I made this Monday night after being inspired by a Fun Monday post. It was very satisfying.

The next time I make this I’ll add sauteed red onions for my taste buds. The penne pasta was just what happened to be in my cupboard so I used it even though the recipe calls for fettuccine or spaghetti. I think farfalle would work well, too.

PASTA WITH CARBONARA SAUCE

4 eggs
1/4 c. butter
1/4 c. whipped cream
1/2 lb. bacon, cut up (I used pancetta from Trader Joe’s that was cubed already)
1 lb. fettuccine or spaghetti
1 c. grated Parmesan or Romano cheese
1/4 c. snipped parsley
Pepper
Let eggs, butter and cream stand at room temperature for 2 to 3 hours. In a skillet, cook bacon until brown. Remove bacon and drain on paper toweling.Heat an ovenproof serving dish in a 300 degree oven. Meanwhile, beat together eggs and cream just until combined. Add pasta to a large amount of boiling salted water. Cook 10 to 12 minutes or until tender but not firm; drain well.Turn hot pasta into the heated serving dish; toss pasta with butter. Pour egg mixture over and toss until pasta is well coated. Add bacon, cheese and parsley; toss to mix. Season to taste with pepper.Serves 12 side-dishes.

F is for Farmers Market where we shopped this last Saturday.

F is for fruit. We have fields of strawberries in our town and strawberry stands where we can buy them all during the week fresh from the fields when they are in season.

We bought purple cauliflower, artichokes, brussel sprouts, and limes. (Nothing starting with F) but all very fresh and flavorful. The artichokes were wonderful. My husband likes to have his with mayonnaise and I love mine with Ranch Dressing. Yum! I made a cauliflower soup that was blended with onion and garlic. (strange to eat purple soup). It was very good.

 

This is a strawberry field near my home. This made me want to sing “Strawberry Fields Forever

 

This is a strawberry stand in my town that sells fresh berries from the adjoining field. So luscious, sweet and juicy!

Fun Monday ~ February 25th

This week’s Fun Monday is easy, Mariposa is hosting and asking TWO things –

First (1) Please share with us how the NAME of your BLOG was made? I can’t wait to hear interesting funny stories!

This is a photo of my brother starting my blog. He’s sitting in front of his laptop excited that so far it’s all working. Now understand that I hadn’t started blogging yet so I still had a lot to learn about taking good pictures for posting.

When my brother told me he was going to start a blog for me I was a little afraid that I wouldn’t be able to handle the technology. He convinced me everything would be ok. We then started brain storming about what I should name it. We came up with a few fun names but the way I came up with my keeper is…

a. I’m generally a very happy person.

b. I’m also someone who wonders about a lot of things and have a deep need to know.

So as we were discussing point a and b my husband came up with The Happy Wonderer.

As far as the purpose of my blog I chose “to Honor and Encourage”. I’m an encourager to people around me and I wanted that reflected in the relationships I’d develop on my blog. It is very important to me to Honor Jesus Christ who I consider to be my King.  I want my words and posts to be things that will encourage people and be something that won’t reflect poorly on my King. My blog was born on March 3, 2007 so I am very close to my first bloggy birthday!

Oh boy, I love food! I also love to enjoy people around a table with good food. So what to show? I’m going with a favorite dinner, lunch and breakfast!

 

A typical dinner is some protein with a couple veggies items. This is a easy dinner that we enjoy. Some great bbq’d Rib Eye Steaks, sauteed mushrooms with caramelized onions, and a green salad with tomatoes and cucumber. Now to go with this my hubby will make me one of my favorite drinks, a Kensington Dream. It’s a drink he copied after watching a bartender in South Kensington (England) make it for me. Update: A few of you wondererd what is in this drink. There is brandy, creme de cassis, juice of half a lemon, amaretto, shaken together and then you top it off with champagne! They don’t call it a dream for nothing, cuz you’ll soon be dreamin after you drink it 🙂

 

For lunch I am always ready for Mexican Food with lots of good salsa and cilantro! This happens to be a meal at one of our favorite Mexican restaurants in town, El Tecolote.  We are having an Open Tamale, chips, salsa, and guacamole.

 

Most mornings I have my high fiber cereal with a banana and large cup of black coffee. In the summer I add more fruit that is in season.

Lovella’s Walking Club Tally ~

Dear and I headed out again to Ventura to take our walk along Emma Wood State Beach. We started earlier than usual and the weather was more active today as a storm is blowing in. Here are a few of the many photos I took.

 

There were a lot more birds out today. We were the only humans out and about for a while until the groups of runners descended on us training for the Los Angeles Marathon.

 

On the way home we stopped at the Farmers Market in Camarillo on Ventura Blvd. We decided to buy some veggies for later. Lots of pretty flowers to look at, too. We bought a purple cauliflower, 2 huge artichokes, some brussel sprouts and a couple limes.

Have a wonderful day and keep on walking. Oh yes my totals were great this week because Willow and I walked an hour each day but Friday and I went on a hike and the beach walk too! 10,706 step average for the 6 days! I think hikes uphill should be double steps!

Recipe Round-Up ~ Banana Bread

You can head over to her blog all the way in Northern Ireland tomorrow, Wednesday, when she’ll have links to all sorts of breakfast goodies!  If you want to participate just create your post and head over to her site and leave your link. I decided to make and show my blender Banana Nut Bread.

Banana Nut Bread

2-1/2 Cups Sifted Flour
3 tsp. Baking Powder
1/2 tsp. Salt
3/4 C. Walnuts
1 Cup Sugar
1/3 C. Soft Butter
1 Egg
3 Small Bananas cut up
1/2 C. milk

In medium bowl combine sifted flour, baking powder, and salt. Put walnuts in blender to chop. Pour walnuts into dry mixture and blend together. Next put sugar, butter, egg, bananas and milk into blender and blend well. Pour blended mixture into the dry mixture and mix till blended.

Pour into greased and floured Loaf pan and bake at 350 degrees for 60 minutes or until tester comes out clean.

Slice and enjoy…

Fun Reunions ~

 On Valentine’s Day night we met our dear friends from Washington State at a Mexican Restaurant in Venice (California) for dinner. They were visiting Disneyland with their daughter Deena, her husband Jeremy and their grandkids Talia and Martin. We decided to meet at La Cabana which was about halfway for both of us to drive.

They still make their own tortillas at this restaurant.

Jan and Bob…Jan is one of my walking buddies in the Seattle area. Bob was our former pastor and is our good friend. We have been on several adventures with Bob and Jan and our other good buddies Dave and Jody. Bicycle trips in the wine country, bicycle trips in the San Juan’s, bicycle trips in Victoria, B.C., and Leavenworth. Our most recent wonderful adventure was a walking trip in Great Britain. I for one am happy to have retired my bicycle after quite a nose dive and “knock out” experience in Leavenworth.

What’s wonderful about good friends is that you can catch up in 3 seconds and feel as if you haven’t been apart.

Monday Walk in Whittier

I drove Southeast through Ventura County into Los Angeles County to the suburb of Whittier, east of Los Angeles to visit my sister Kathy. Whittier is home to Whittier College, Richard Nixon’s alma mater. He majored in History. We decided to combine a nice healthy walk up the hills and down in the older beautiful neighborhoods of Whittier so we could then have a guilt free nice lunch as a reward.  Kathy chose the Crepes and Grapes Cafe on Greenleaf Ave. in Uptown Whittier. I have a few photos of our time. The first photo is of the great Avocado tree that keeps me well stocked by Kathy when the avocados are in abundance. Then we walked along such wonderful canopied streets and we saw some beautiful blossoms. The last photo is of my yummy crepe. This was a build your own crepe for $6.95. I chose turkey, red onion, tomatoe, green pepper and a ginger lime sauce on the side. Kathy chose a white sauce, chicken, spinach, tomato, and Jack cheese. Duhlicious!

 

This is my sister Kathy with her grandson Jackson. She is my oldest sister, a wonderful friend and Godly woman. Thanks Kathy, that was fun…

TT #20 ~ 13 Tips for eating Healthier

These tips are from one of my new favorite sites SparkPeople.

1. Use mustard instead of mayo on your sandwiches. You’ll get lots of flavor with much fewer calories and fat.

2. Select whole wheat bread over white bread. Be sure to read the label to ensure you’re getting whole grains, not just colored white bread.

3. Eat the white meat of turkey or chicken, which is lower in fat than dark meat, red meat and pork. Animal fat is the number one dietary source of unhealthy saturated fat.

4. Start using lean ground beef, pork tenderloin or fish instead of high-fat cuts of meat.

5. Change your cooking methods. Bake, grill or broil your meals instead of frying. Use non-stick sprays—or better yet, non-stick pans—instead of oil.

6. Drink more water. Slowly reduce the amount of soda you drink and replace it with herbal tea or water. Aim for eight cups of pure water each day.

7. Don’t drink your calories. Eat a whole orange instead of drinking a glass of juice, for example. Real food is usually more filling and more nutritious than juices, fruit drinks, and other high-calorie beverages.

8. Serve sauces and dressings on the side. Dip your fork into the sauce, then dip your fork into the food. You’ll still have the flavor but with fewer calories.

9. Gradually switch to skim milk. Milk commonly comes in four varieties: whole (4% fat), 2%, 1% and skim (0% fat). Gradually wean yourself from the higher-fat varieties to the lower fat milk every two weeks. For example: continue drinking your normal 2% milk for two weeks, then move to 1% for two weeks, and then your palate will be ready for the consistency of skim milk.

10. Switch from full-fat cheeses to reduced-fat or fat-free cheeses the same way you would with milk (see tip above).

11. Order vegetables on the side instead of fries. Flavor them with lemon juice or herbs instead of butter.

12. Snack on fruit and nuts instead of sugary treats. The fiber, protein and healthy fats in this combo will sustain you to your next meal and you won’t have the energy slump that comes after eating candy.

13. Reduce your portion size. Most people will eat whatever amount of food is in front of them, so start putting your meals on smaller plates. You will be just as satisfied because your mind “sees” that you’re eating a full plate of food.

The Somis Nut House

I made a little trip to the Somis Nut House. It’s located on Los Angeles Ave. between Lewis Rd. (Hwy 34) and North St. in the little town of Somis, California. It’s a family run business that has been in Somis for almost 48 years. It’s nothing great to look at from the outside but on the inside you find rows and rows of nuts, dried fruit, nut meal, and specialty candy, jams, sauces, etc.

If you blink you’ll drive right by it.

Like I said nothing glamorous on the outside.

 

 

Almonds, Filberts, Cashews, Peanuts, Pecans, trail mixes, etc.

 

Love the signs like Cashier Nut. And I was so pleased to find Walnettos here. “Want a Walnetto?” Is anyone old enough to remember that line from Rowan and Martin’s Laugh-In?

These were my choices for the day. Roasted and Salted Peanuts, Honey Roasted Peanuts, and of course the Walnetto’s! We were more impressed with the taste of the peanuts from Somis Nut House than Trader Joe’s. Dear says “In comparison the peanuts from Trader Joe’s tasted like they came across the Atlantic between the toes of Columbus’ men.”

So the next time I want nuts for anything I’ll be coming back to Somis Nut House…
