Good Friday

Today we remember Good Friday, the day Jesus was crucified on a cross and when he breathed His last and was laid in a tomb.

Were the angels looking down from heaven to see all that would transpire?

We are so fortunate to be able to attend a Good Friday service this evening in Colville.

And about the ninth hour Jesus cried out with a loud voice, saying, “Eli, Eli, lema sabachthani?” that is, “My Godmy God, why have you forsaken me?”

The Death of Jesus

45 Now from the sixth hour there was darkness over all the land until the ninth hour. 46 And about the ninth hour Jesus cried out with a loud voice, saying, “Eli, Eli, lema sabachthani?” that is, “My God, my God, why have you forsaken me?” 47 And some of the bystanders, hearing it, said, “This man is calling Elijah.” 48 And one of them at once ran and took a sponge, filled it with sour wine, and put it on a reed and gave it to him to drink. 49 But the others said, “Wait, let us see whether Elijah will come to save him.” 50 And Jesus cried out again with a loud voice and yielded up his spirit.

And he rolled a great stone to the entrance of the tomb and went away. 61 Mary Magdalene and the other Mary were there, sitting opposite the tomb.

Go, make it as secure as you can.” 66 So they went and made the tomb secure by sealing the stone and setting a guard.

Truth for Today (Holy Week)

My usual Thursday Truth for Today will be a little different today because of Holy Week. If you have verses to share I will add them to the end of this post. Today is Maundy Thursday a day we remember the night Jesus was betrayed and the night He had the last supper with his disciples.

My Lenten Rose (Hellebore) in Kenmore appeared out of the cold hard ground every winter just before the season of Lent. I find it to be a humble plant in that it’s beautiful bloom faces down to the earth. I have to get down on my knees to capture a good photo of the beautiful bloom. It is a consistent reminder to me of our Savior and His humility in coming down to earth to live among us in human form. He took on our lowly body to be with us because of His great love for us. When I see my Lenten Rose come up I think of Jesus Christ’s humility and obedience to the Father in going to the cross and suffering and dying for all our sins. This is a reminder from nature that draws me to God’s truth in His Word, the Holy Bible, which leads me to worship.

Philippians 2: 5-11 (ESV) 5 Have this mind among yourselves, which is yours in Christ Jesus, who, though he was in the form of God, did not count equality with God a thing to be grasped, but emptied himself, by taking the form of a servant, being born in the likeness of men. And being found in human form, he humbled himself by becoming obedient to the point of death, even death on a cross. Therefore God has highly exalted him and bestowed on him the name that is above every name, 10 so that at the name of Jesus every knee should bow, in heaven and on earth and under the earth, 11 and every tongue confess that Jesus Christ is Lord, to the glory of God the Father.

On this day of Holy Week my prayer is that you will turn your eyes to our Savior and accept His sacrifice on the cross in faith, repenting of your sins and receiving forgiveness for your sins and and a new life of hope for your future in Him.

It was just before the Passover Feast. Jesus knew that the time had come for him to leave this world and go to the Father. Having loved his own who were in the world, he now showed them the full extent of his love.

Jesus knew that the Father had put all things under his power, and that he had come from God and was returning to God;  so he got up from the meal, took off his outer clothing, and wrapped a towel around his waist.  After that, he poured water into a basin and began to wash his disciples’ feet, drying them with the towel that was wrapped around him.

Easter Week Hodgepodge

Wednesday Hodgepodge is ready to go with a new set of question from Joyce. Thank you, Jo!

1.What do you love about your life right now? 

There is so much to love. God loves me. Jesus died on the cross and was raised to life to save me from my sins because He loves me. The Holy Spirit guides me. Greg and I are coming up on our 50th wedding anniversary at the end of this year. Our three kids and their spouses honor us. Our two grandchildren are a gift to us and we get to love them. We love our church where the Word of God is preached and honored. We love our little country town and our country bungalow. We love the Godly heritage we were privileged to grow up with. We do not take any of this for granted.

2. March 26th is National Spinach Day…are you a fan? If so, how do you like yours prepared/served? 
We enjoy a traditional soup that we call ‘Green Borsch’ that is a spinach soup we serve with hard boiled eggs chopped up in it. Greg has ordered spinach enchiladas on occasion. Spinach salad is good, too.

3. In this current season would you say you need to spend more time looking inward or that you need to get out of your head? Tell us why. 

The inward needs a good evaluation with help from God to get on the right track and continue on the right track. What is on the inside can’t help but come out through our mouth and actions. We are a selfish people who need help to get out of our own heads. 🙂

4. Are you following the ‘March Madness’ madness? (That’s US college basketball in case you’re out of the loop).

We do have a team from our state and our closest large city in the tournament. Gonzaga is a private college in Spokane, and they are in the Sweet 16. Gonzaga has made it to the Sweet 16 for the ninth consecutive year. Spokane is also hosting the final game of the tournament so the police are gearing up for all that excitement.

Fun fact about Gonzaga is that Bing Crosby is an alumnus. Spike the Bulldog is their mascot. We have lots of ‘Zags’ fans in our little city of Colville and in the state of Washington.

What’s something that feels like actual madness to you right now? 

So much feels like madness. The Southern Border for one. The hate that fuels so much of politics and the lies that deceive. Pronoun craziness. OYE! It is our natural bent to want to be God but we are not God and we are not ultimately in control.

5. How will you celebrate the Easter/Passover holiday this year? 

We will attend a solemn Good Friday Service on Friday evening that will include Communion. On Easter we will attend our Easter Celebration which includes an Easter Coffee Fellowship before our service (that I’m in charge of) and then our glorious celebration of our Risen LORD! After church we will enjoy a gathering for a meal and Easter Egg hunt at our Colville Kids’ home.

Full to the Brim

Our kids from the ‘Coast’ arrived this past Thursday and Friday for a weekend of celebrations. The title of this post is accurate and be forewarned that this is a loaded post, full of photos. These days I don’t put together photo albums anymore. I use my blog as my photo album. This is a special birthday album.

On Friday we worked on potato and beef filled piroshky using Jamie’s sour dough, delicious! Our Grands have a presentation coming up at their Homeschool Co-op on Russia and these goodies will be part of the International pot-luck. A labor of love.

We gathered on the mountain on Saturday morning to create a heart filled atmosphere for Addy’s 7th birthday celebration. She chose the theme of hearts.

She received wonderful presents and was so excited when her special wish for a pair of roller skates came true!

Auntie Katie and Uncle Andrew were in on the surprise present from Addy’s mommy and daddy and bought her all the safety pads for her wrists elbows and knees!

Let the games begin. We had a quiz on Addy’s 10 favorites. Afterwards we had to create some critters with our eyes closed.

I’m sure by now I’ve lost several of you dear readers out there, but there is more! When all the guests departed we drove back to our country bungalow to chill a bit before all the family arrived at our place to make dinner and dessert to celebrate me. We had to take advantage of all of us being together.

The kids prepared a wonderful stir fry with chicken and veggies with a sauce from scratch. I sat in my recliner and listened and enjoyed the aromas coming from the kitchen. Strawberries were prepped for Strawberry Shortcake dessert. Happy Birthday to me! I received lovely gifts, too. My favorite gift is being together.

Our weekend was not over yet. We had one more surprise in store for us at our church service on Sunday.

Addy had been practicing a piece on the piano to play at church on this Sunday. Our church has a place for special numbers from the congregation from time to time.

Addy was announced and went up to the Baby Grand and played the piece she had prepared, O How I Love Jesus. She is so brave and confident and played sweetly in front of 300+. It brought tears to my eyes.

A perfect song to play on Palm Sunday and the beginning of Holy Week. It is all about Jesus and His love and sacrifice for us!

The sermon on this Sunday was a continuation of our series in Colossians. From Colossians 3:18-21 we heard about Home~Where we live like Jesus. Christ changes the home and how we live in it.

Katie and Andrew had to hit the road for home right from church. The rest of us enjoyed another meal on the mountain before Josh and Laura headed back home. Greg and I headed home to put our feet up. Our local kids had one more party to go to for Great Uncle Scott. Full to the brim is what this weekend was. I’ll save the Elk herd we saw on the way home for another day and post. I will post the words from the hymn Addy played a stanza from here for the sake of context.

Nadyezhda’s (Надежда) Kulich (Paska)

This is a historic post that I will probably repost every year during one of the days leading up to Easter. Easter shares the rank with Christmas as my favorite holiday of the year. My winter favorite and my Spring favorite. Easter has more ‘dear to me’ food traditions. Our mom Nadyezhda (Nadia) passed these recipes to us with tweaks along the way. Nadia or Nadya (Надя, accent on first syllable) is the diminutive form of the full name Nadyezhda (Надежда), meaning “hope” and derived from Old Church Slavonic.

What many of you call Paska we call Kulich. This is my mom’s Russian Easter Bread Recipe that I quartered because the amount she would make is quite daunting for me. We have cut it in half in years past. What you need to know about my mom and recipes is that she ends up tweaking them from year to year so this recipe is for her Kulich from 2001. I have a 2009 and 2012 recipe, too. This one was easier to quarter. Here’s the link to the original. My dear mom passed away from this earth in September of 2013 so I cherish her tweaked recipes.

I will post her recipe every year about a week before Easter for inspiration. We like it fresh so many years we bake it on the day in between Good Friday and Easter. This is not a recipe that I would attempt on my own. In my mind it calls for company enjoying the process together, like this group of loved ones in 2016.

It’s always good to pray over your dough!

Kulich

Ingredients:

  • 2 packets rapid rise yeast
    1/4 cup lukewarm water
    1/4 cup lukewarm milk
    1 teaspoon sugar
  • 4 egg yolks
    1 egg
    1-1/4 cups sugar
    3/4 cup butter
    1 cup whipping cream
    1 cup half and half
    1/2 ounce apricot brandy
    1-1/2 teaspoons powdered vanilla
    1 teaspoon salt
    Zest of half a lemon
    About 2-1/2 pounds of flour, sifted (about 7 cups)
    Vegetable oil to coat the rising dough
  • 6 to 7 one pound or two pound cans for baking. You can use loaf pans or large muffin tins if you don’t have the cans to bake them in

Method:

Add yeast to the lukewarm water and milk and sugar in a stainless steel bowl making sure the liquids are lukewarm. Let this mixture dissolve and sit.

Beat the egg yolks and egg together.
Cream the butter and sugar in the large bowl of a stand-up mixer.
Add the eggs to the butter and sugar mixture slowly mixing to combine and then beat to incorporate well.

Mix the half and half with the whipping cream and heat until lukewarm, not hot, and slowly incorporate into the creamed mixture.
Mix in the vanilla and brandy.
Add the yeast mixture and the salt and beat with a mixer.
Continue beating and add the lemon zest.
Continue beating and add the sifted flour about a cup at a time.
Once you cannot beat the dough any longer using the mixer, put the dough on a floured surface and start incorporating the remaining flour by kneading the dough.
The dough should be kneaded very well, approximately 10 minutes.
You should knead the dough until you can cut it with a knife and it is smooth without any holes.
Place the dough in a stainless steel bowl.

Take some oil and pour a little on the dough and spread it all over the dough making sure to turn the dough so it is coated evenly.
Cover with plastic wrap right on the dough and a dish towel on top of that.
Place in a warm place away from drafts to rise.

(My sister usually puts it into the oven that has been warmed slightly).

It is now time to prepare the coffee cans (1 lb. and 2 lb. cans are the best)

Cut circles the size of the bottom of the cans out of wax paper. You will need four circles per can. Make sure the cans are well greased. Put the 4 circles in the bottom of the cans.

Use a empty and clean coffee can like the ones above. If there is a label make sure to take it off. If the can has a lip at the top you’ll need to use a can opener to cut the lip off the can. I hope these pictures will make the process easier to understand.

After putting the circles in the bottoms of the cans, cut sheets of wax paper long enough to line the sides of the can and tall enough to be 2″ above the rim of the can. Use Crisco to seal the ends of the paper.

Back to the dough…

When the dough has doubled in size, punch it down and turn it over.
Let it rise a second time until it doubles in size. Punch it down again.
Now the dough is ready to put into the prepared cans.
You will take a portion of dough about 1/3 the size of the can. Knead it and form it into a smooth ball that you can easily drop into the can.

Let the dough rise again inside the can until it is at least double in size.

Bake in a 350 degree oven until golden brown on top.(approximately 30 minutes or more depending on your oven.)

Let them cool slightly in the cans. Remove them from the cans and then cool completely standing up. Some people cool them on their sides turning them often to keep their shape. We found this time that they cool just fine and keep their shape standing up so we didn’t bother with that step!

This recipe yielded 7 loaves.

To go with this bread my mom always made a wonderful sweet cheese topping that is formed in a mold in different shapes.  I’m adding the recipe here.

 Seernaya Paska

Ingredients:

18 – hard boiled eggs /
3 pounds Farmers cheese /a dry curd cheese like a dry cottage cheese can be substituted.
1 pint whipping cream /
3 cubes unsalted butter (12 oz.) /
3 cups sugar /

Press the Farmers cheese through a sieve. (This is the hardest part of the recipe) If you find a very small curd cheese you won’t have to do this to the cheese. I usually use a wooden spoon and press it through a wire strainer a little at a time. Separate the egg yolks from the whites. (You will not be using the whites).

Press the egg yolks through the sieve. Cream the sugar and butter together. Beat in the egg yolks. Beat in the cheese. Add whipping cream and mix well. You will place the mixture into a strainer lined with about 3 layers of cheesecloth. You will need enough cheesecloth to wrap up and over the top of the cheese. Place the cheese mixture into the cheese cloth lined strainer, or flower pot with holes in the bottom. Bring the ends of the cheese cloth up and tie the ends on top of the cheese in a knot. Place the sieve or flower pot into a larger bowl suspended with enough room for the cheese to drain without sitting in the drained liquid. Place a plate on top of the cheese an place a heavy rock, brick, or other weight on top of the plate. Refrigerate over night.

This recipe is enough to feed an army. If you don’t have to feed an army here’s a scaled down version :0)

If you just want a normal amount, cut the recipe in thirds. (6 cooked egg yolks, 1-lb. cheese, 2/3 cup whipping cream, 1 cube butter and 1 cup sugar.) Enjoy!

Farmers Cheese or Hoop Cheese can be hard to find. There are Russian-Ukrainian delis that sell a dry curd cottage type cheese that will work. If you can find a dry cottage cheese at the grocers that will work too.

I found a site online that sells the cheese that I use for this yummy spread.

The cheese spread in the flower pot in the refrigerator with the stone on top to help release as much liquid as possible.

We like to serve the kulich with the spread and strawberries.

When the Mennonite Girls Can Cook had a Paska demonstration at Lepp Market in Abbotsford I brought a completed Seernaya Paska, sweet cheese spread molded from home since it has to sit in the refrigerator having all the liquid pressed out for at least 24 hours. I plated it and showed one of the flower pots I use to mold the cheese and the heavy stone wrapped in plastic wrap to weight the cheese and force the liquid out. We used fresh viola blossoms to decorate it. I made an error in the pronunciation of this dish in our first cookbook. It is called seernaya paska not seerney paska . I’ve always had a hard time with my Russian. I’ve found these plastic flower pots work well to mold the cheese. Make sure you add holes in the bottom of the pot so the liquid can escape easily.

True Confessions: I have not attempted to make Kulich here in Colville. I have made Seernaya Paska to go with Kulich that I purchased at Kiev Market in Spokane. The market Kulich was only good for decorating the table. It does not compare to our mom’s recipe.

Are you preparing for Easter?

Our Time in Northern Idaho

Most of our time in our neighboring state was spent shopping and eating. We heard about Le Peep from my sister and her hubby. We decided to try it for breakfast on Tuesday. The food and staff were great. Greg had the Stuffed Poblano and I had their Eggs Bene special made with corned beef.

We walked along the boardwalk next to the restaurant and enjoyed the clear views and sunshine. It was early and still on the cool side.

Fortified from our breakfast we tackled several thrift stores, the Chef’s Cash and Carry, At Home, Tractor Supply and Costco. Idaho gasoline is fifty cents less a gallon than Washington.  We go to the cash and carry regularly for supplies for our church kitchen. Sales tax is less in Idaho, too, so we took advantage of that for some of our regular purchases.

I did not take any photos at our early dinner at the Blue Bird in Uptown Coeur d’Alene. We both enjoyed the Halibut and Chips (French fries, Hoagies) with the in house tartar sauce and zesty ketchup. One more stop before we called it a night at Seasons where we split a slice of Huckleberry Cheesecake. Back to the hotel for a relaxing evening.

Before we packed up the car (which wasn’t an easy task), we had breakfast again at Le Peep. I had the stuffed french toast and Greg had a Mexican Skillet. Both dishes were delicious! After checking out of the hotel we started our trek back home with stops in Post Falls, Spokane and Deer Park.

Our stop in Post Falls happened to be right next store to another Tea Room I was not aware of and it really had all the tea vibes. It is called La Tea Da. It will be a treat to make some plans to return for tea.

On Thursday at our last session of Winter Bible Study I was informed of another Tea Room in Spokane. This one would be the closest for us to travel to so there might be a tea adventures in the near future at Brambleberry Cottage .

Today, Friday, is a baking day here at our country bungalow with our daughter-in-laws. Tomorrow is Addy’s birthday party. Katie and Andrew are traveling over today. I am and will be very busy with all our kids through the weekend.

Hello Spring Hodgepodge

We are doing the happy dance because it is officially Spring!

Our local ‘kids’ treated me to a birthday meal on their mountain last Friday. It was fun to be together and enjoy some vitamin D outside watching the Grands on their bikes! We’ve been enjoying the glorious sunshine and temps above 60 the last several days.

Time for Wednesday Hodgepodge. Thank you, Joyce for hosting!

1. Spring is officially upon us, no matter what the weather may be in your neck of the woods. Is there any ‘spring cleaning’ on your to-do list? What’s your most dreaded task? 

I would say washing windows inside and out. But…I don’t have to dread it because the window washer is only a phone call away and he’s efficient and inexpensive.

2. What’s something many people seem to love, but to you feels like ‘watching the grass grow’? 

Nine innings of major league baseball.

3. Mint grows in abundance during the spring season. Are you a fan? What’s your favorite food with a ‘minty’ flavor? 
I am a fan of mint.
Ina Garten’s recipe for Tabbouleh is a favorite food that uses fresh mint. Here’s a link to the recipe.

4. It’s been said, ‘Absence makes the heart grow fonder.’ Agree or disagree? Explain. 

I suppose I agree. When something you enjoy isn’t available anymore you miss it and add an extra layer of fond memories to it that can make it seem even more important in your mind.

5. Are there any festive spring events in your city or town? If so, will you take advantage of them? 

Our best Spring events are celebrating Easter and the birthdays of our Grands. Today is Addy’s birthday and we’ll all be together to celebrate her birthday this weekend. JJ’s birthday is in the April, so we’ll gather again to celebrate him. I’ll say a lot about Easter next week.

Happy Birthday, Addy! Baba and Gramps can’t wait to celebrate you!!

The one in town event that starts back up in the Spring is our Farmer’s Market and I do take advantage of that.

Greg and I are having a little escape in Idaho doing many things that I’m fond like good restaurants and a large variety of shopping. The photo below is from a High Tea that I was able to enjoy in Idaho.

We are traveling home today so I will be late in coming around to see how you feel about mint.

Tea in Coeur d’Alene

We are having a little getaway to our neighboring state of Idaho. We traveled on Monday morning and our first stop was at the Inland Café & Tea in Coeur d’Alene.

I enjoyed the High Tea. The scone was so fresh and warm and delicious.

My favorites of the little sandwich bites were the chicken salad and ham with pepper jelly.

I was able to choose my teacup from all of these and chose one with the daffodils.

Greg chose a hot sandwich for lunch. A turkey brie sandwich with a cup of the soup of the day.

We enjoyed and would recommend this spot in Coeur d’Alene for their fresh and good tasting food.

We left the cafe and shopped at a few spots before we checked into our hotel. After we checked in we tried Happy Hour at Bardenay Restaurant and Distillery close to our hotel. It was good and we enjoyed conversation with a couple who moved to Idaho from Alaska fourteen years ago.

Today we hope to walk along the Centennial Trail, shop, and enjoy two more new to us restaurants for lunch and dinner.

Grateful to God for all the abundance that we enjoy with peace and joy.
