Caramel Pecan Cookies

 

Crust:
Ingredients for Basic Butter Cookies, recipe follows
Caramel pecan topping:
1 1/2 cups sugar
1 cup heavy cream
3/4 stick (6 tablespoons) unsalted butter, cut into bits
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups pecans (1/2 pound), toasted, cooled, and coarsely chopped (I bought pecans that were already chopped and roasted at Trader Joe’s)

To make the crust: Grease a 13 by 9-inch metal baking pan, then line with foil, leaving a 2-inch overhang on both ends, and grease foil.
Follow recipe for basic butter cookies to make dough (do not chill), then press dough evenly onto bottom of baking pan, using plastic wrap on top to prevent dough from sticking to your fingers, and chill until firm, about 20 minutes.
While crust chills, put oven rack in middle position and preheat oven to 375 degrees F.
Bake crust until golden brown, about 30 minutes. Cool in pan on a rack 20 minutes. (Leave oven on.)

Basic Butter Cookies:
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 sticks (3/4 cup) unsalted butter, softened
1 cup sugar
1 large egg
1/2 teaspoon vanilla extract
Whisk together flour, baking powder, and salt in a small bowl.
Beat together butter and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a standing mixer (preferably fitted with paddle attachment) or 6 with a handheld. Beat in egg and vanilla. Reduce speed to low, then add flour mixture and mix until just combined

 

To make topping while crust cools: Cook sugar in a 2 1/2 to 3-quart heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted to a deep golden caramel. Tilt pan and carefully pour in cream (caramel will harden and steam vigorously). Cook over moderately low heat, stirring, until caramel is dissolved. Remove from heat and stir in butter, vanilla, salt, and pecans.
Immediately spread topping over cooled crust and bake until bubbling, about 20 minutes. Cool completely in pan on rack, about 2 hours.

 

Run a heavy knife under hot water, then wipe dry and cut confection into 2-inch triangles, diamonds, or squares. Caramel pecan cookies keep, layered between sheets of waxed paper or parchment, in an airtight container at room temperature 1 week.

Monarch Butterflies ~ Honeymoon Memories

I’d like to go back to the Butterfly Inn when the Monarch Butterflies are in full residence in this part of California. Dear and I stayed there during our honeymoon in December of 1974. Bottom two photos of this collage.

In all the world, no butterflies migrate like the Monarchs of North America. They travel much farther than all other tropical butterflies, up to three thousand miles. They are the only butterflies to make such a long, two way migration every year. Amazingly, they fly in masses to the same winter roosts, often to the exact same trees. Their migration is more the type we expect from birds or whales. However, unlike birds and whales, individuals only make the round-trip once. It is their children’s grandchildren that return south the following fall.

This is the Butterfly Inn in Pacific Grove, California. When Dear and I stayed there in 1974 we had a little detached 1 room cabin to stay in. It’s been upgraded since then probably a few times but as you can see it’s still pretty low key and quaint.

I’m also inspired to try to get our honeymoon shots from their slide state (negative state) to a disc state!! Has anyone done that and do you have any tips for me???

I’m so looking forward to Thanksgiving this year. Dear and I will be traveling to Seattle a week from today to celebrate there with our children and close friends. I’m really thankful for this. Blessings on all your plans.

Here’s where I went with this quote.

God is love ~

I John 4: 7-10 ~ “Beloved, let us love one another for love is from God, and whoever loves has been born of God and knows God. Anyone who does not love does not know God, because God is love. In this the love of God was made manifest among us, that God sent his only Son into the world so that we might live through him. In this is love, not that we have loved God but that he loved us and sent his Son to be the propitiation for our sins.

God disciplines those He loves ~

Hebrews 12: 5-14 ~ “And have you forgotten the exhortation that addresses you as sons?

My son, do not regard lightly the discipline of the Lord, nor be weary when reproved by him. For the Lord disciplines the one he loves, and chastises every son whom he receives.

It is for discipline that you have to endure. God is treating you as sons. For what son is there whom his father does not discipline? If you are left without discipline, in which all have participated, then you are illegitimate children and not sons. Besides this, we have had eartly fathers who disciplined us and we respected them. Shall we not much more be subject to the Father of spirits and live? For they disciplined us for a short time as it seemed best to them, but he disciplines us for our good, that we may share his holiness. For the moment all discipline seems painful rather than pleasant, but later it yields the peaceful fruit of righteousness to those who have been trained by it.

Therefore lift your drooping hands and strengthen your weak knees, and make straight paths for your feet, so that what is lame may not be put out of joint but rather be healed. Strive for peace with everyone, and for the holiness without which no one will see the Lord.”

Because God is Love in the purest form and His son resides in us we are disciplined so that we can reflect His image to the world and to glorify Him. God’s plan to save us because of His love for us involved the terrible pain of His son on the cross. When we receive this sacrifice for us we become children of God.  As children of God we need to accept the fact that we will suffer in order to be conformed to the image of God. His Firstborn suffered we will suffer, too.

We had a wonderful time being together. Catching up, encouraging, talking about Jesus. Our evening ended with Deda (Great Grandpa) praying a prayer of thanks to our God for the salvation that He extended to us through Jesus Christ His Son and praying a blessing on his great grandson Jack and praying for our son Josh as he heads to China today. What a wonderful blessing and heritage we have. Then we all sang How Great Thou Art together robustly! Amen!

Overnight Breakfast Casseroles ~ Recipes

Overnight Mushroom Egg Casserole

Ingredients:  5 Tblsp. butter, divided, 1/3 cup all-purpose flour, 1- 1/2 cups milk, 1 (4.5 oz) jar sliced mushrooms, drained, 10 eggs, 2/3 cup half & half cream, 1/4 tsp. salt, 1/8 tsp. pepper, 10 bacon strips, cooked and crumbled [I used ground breakfast sausage]

1. In a saucepan, melt 3 tblsp. butter. Stir in flour until smooth, gradually add milk. Bring to boil; cook and stir for 2 minutes or until thickened. Stir in the mushrooms; set aside.

[2.] Fully cook sausage and set aside. I used 2 large gourmet breakfast sausages.

3. In a bowl, whisk the eggs, cream, salt and pepper. In a skillet, heat the remaining butter until hot. Add the egg mixture; cook and stir over medium heat until eggs are fully set. Transfer to a greased 11 x 7 x 2-inch baking dish; top with mushroom mixture. Sprinkle bacon or [sausage]. Cover and refrigerate overnight.

4. Remove from the refrigerator 30 minutes before baking. Bake uncovered, at 325 degrees F for 32-36 minutes or until heated through.

Tip: This recipe seems to be a little under seasoned. I’d add a little zing with some extra salt and pepper and throw in some scallions in the egg mixture if you want.

 Breakfast Bread Pudding

 

Ingredients: 12 slices white bread, 1 (8 oz.) pkg. cream cheese, cubed, 12 eggs, 2 cups milk, 1/3 cup maple syrup, 1/4 tsp. salt

Remove and discard crusts from bread. [I didn’t have white bread so I used Challah Egg bread] Cut bread into cubes. Toss lightly with cream cheese cubes; place in a greased 13 x 9 x 2 inch baking pan. In large mixing bowl, beat eggs. Add milk, syrup and salt; mix well. Pour over bread mixture. Cover and refrigerate 8 hours or overnight. Remove from refrigerator 30 minutes before baking. Bake uncovered at 375 degrees F for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before cutting.

Again this recipe also seemed like it could have used more salt, I would use 1/2 tsp. instead of 1/4 tsp. When you serve it make sure to have a pitcher of maple syrup for people to add on the pudding if they’d like. My bread pudding shown above was half the recipe and so it’s in the smaller baking dish.

Friday Show & Tell ~ Knott’s Berry Farm

 

This photograph  was taken of my parents at Knott’s Berry Farm in Buena Park, California in the 50’s. A big treat for my family was going to Knott’s Berry Farm and eating one of the famous Chicken dinners and finishing off with boysenberry pie. We very rarely (almost never) ate out as a family so this was a big treat.

In the 1920s, Walter Knott (December 11, 1889–December 3, 1981) and his family sold berries, berry plants and pies from a roadside stand beside California State Highway 39, near the small town of Buena Park. In the 1930s, Walter Knott was introduced to a new berry which had been cultivated by Rudolph Boysen. The plant was a combination of the red raspberry, blackberry, and loganberry. Walter planted a few plants he had received on a visit to Boysen’s farm, and later started to sell them at their roadside stand. When people asked him what they were called he said “boysenberries”.

In 1934, Knott’s wife Cordelia (b. 1890 – d. 1974) began serving fried chicken dinners, featuring boysenberry pie for dessert. As Southern California developed, Highway 39 became the major north-south connection between Los Angeles County and the beaches of Orange County, and the restaurant’s location was a popular stopping point for drivers making what at the time was a two-hour trip. Until the development of the 605 and 57 freeways in the late 1960s, Highway 39 (now known in Orange County as Beach Boulevard) continued to carry the bulk of the traffic between eastern Los Angeles and Orange Counties.

Within a few years, lines outside the restaurant were often several hours long. To entertain the waiting crowds, Walter began to build a ghost town in 1940, using buildings relocated from real old west towns such as Calico, California and Prescott, Arizona. They added attractions such as a narrow-gauge train ride, a pan-for-gold area, and the Calico Mine Ride. Frequent activities at what Knott called a “summer-long county fair” included — naturally — boysenberry pie eating contests. When Disneyland was built in nearby Anaheim, the two attractions were not seen as direct competitors, due to the different nature of each. Walt Disney visited Knott’s Berry Farm on a number of occasions, and hosted the Knotts at his own park. The two Walters had a cordial relationship, and worked together on a number of community causes.

In 1968, the Knott family fenced the farm, charged admission for the first time, and Knott’s Berry Farm officially became an amusement park. Because of its long history, Knott’s Berry Farm claims to be “America’s First Theme Park.”
