Truth for Today #5

Thursday February 3rd

On Thursdays my posts will include verses that stood out in my readings from the Bible during the week. One, two, three or maybe more. John 10:11-15

“I am the good shepherd. The good shepherd lays down his life for the sheep. He who is a hired hand and not a shepherd, who does not own the sheep, sees the wolf coming and leaves the sheep and flees, and the wolf snatches them and scatters them. He flees because he is a hired hand and cares nothing for the sheep. I am the good shepherd. Do You Fondue Hodgepodge?

It’s not a Groundhog but it is a Moose! We saw our first Moose in Colville this past Sunday. We were very excited!

Wednesday’s Hodgepodge Groundhog version is today! Thank you to Joyce From This Side of the Pond for asking the questions!

1. The Wednesday Hodgepodge landing on Groundhog’s Day sounds about right. Besides the Hodgepodge what else lands on your calendar just once a week? Is it as much fun as the Hodgepodge-ha!?

The weekly regulars for me land on Sundays, Mondays and Wednesdays. Most every Sunday we meet with our church body for Sunday School and Morning Worship. On Monday evenings we have a Bible Study in a friend’s home. On Wednesday mornings we have a women’s prayer time at our church. They are worthwhile, encouraging and enlightening times with one on one, face to face communication happening. That’s the one thing the Hodgepodge lacks. Wouldn’t it be fun to do Hodgepodge around a table with coffee and treats, face to face!?

2. The Winter Olympics begin on Friday, surrounded by much controversy. Will you be watching? Why or why not? Have you ever been to China?

We haven’t discussed whether we’ll watch or not. The conditions surrounding the event seem oppressive. I have never been to China. Our oldest son and daughter-in-law have been a couple times.

Speaking of China…The Lunar New Year rang in yesterday, celebrated by millions in China and elsewhere! It is the year of the Tiger for them. A few years ago we decided to host a Chinese meal on Lunar New Year and this was the table I set for our meal. Dear had a conference in San Francisco in January of that year and a Russian/Chinese friend of mine gave me a tour of China Town in San Francisco where I bought some of the items to set the table. I found other things at Goodwill to round things out.

3. Something in your life lately that has felt a bit like an ‘Olympic event’?

Walking to our garage and back has been like a Winter Olympic Event on Ice! I landed on my backside once and Dear landed on his backside and hit his head, too, sliding off the icy steps! Thankfully we both did not get hurt badly. We walk like penguins very carefully.

4. Do you like fondue? Sweet or savory? Restaurant only or do you own your own fondue set?

Yes, we do enjoy a good fondue. Mostly Savory but Sweet is good, too. We do own a couple fondue sets. I’ve been to the Melting Pot once with my sisters several years ago. I’m attaching a recipe in the random thought area for a Valentine’s day fondueish dessert you can make without a fondue set. This was a post I shared on the Mennonite Girls Can Cook Blog back in February of 2012.

Chocolate Hazelnut Fondue

1-1/2 cups half and half
1 cup heavy cream
1-1/2 pounds bittersweet or semisweet chocolate, finely chopped. (I used 2 bags of semisweet chocolate chips that I didn’t need to chop)
1/4 cup Frangelico liqueur (If you do not want to use this you can substitute 1/4 cup of strong brewed coffee)
1/4 cup chopped toasted hazelnuts (as always you can omit the nuts if you’d prefer)

Method:

Place the half and half and heavy cream in a double boiler.
Heat the creams until they bubble.
Reduce the heat and gradually stir in the chocolate chips 1/2 cup at a time whisking while adding. When the chocolate is completely blended in, add the liqueur.
Keep warm and sprinkle with hazelnuts just before serving.
You can divide the chocolate into individual dipping bowls and serve with dipping fruit and other items or you can put the chocolate into a fondue pot at this time, too, to keep it warm.

Some dipping suggestions: cookies, biscotti, cubes of cake, dried apricots, pineapple, fresh berries, sliced pears, orange slices, and marshmallows.

This recipe easily served 8 people with leftovers. If you are serving a smaller group half the recipe.

Way Back in January…

…our Eastside kids drove over the pass to stay with and celebrate with our Westside kids. Our daughter-in-love Laura got so many great photos of their time together, celebrating 3 birthdays, enjoying the zoo, jumping at the Flying Squirrel and sitting around tables enjoying meals together. Addy and JJ were spoiled royally with time and fun with their Uncles and Aunties. Photo overload coming your way. Be forewarned!

Sunday January 16th dinner out to celebrate all the birthdays with our kids’ aunt (my sister) and uncle who live on the westside.

Third birthday in January is his. A quick visit to Uncle’s office on his day to wish him a happy birthday.

None of the Eastsiders have stairs in our homes so JJ had a new skill to develop while staying with Uncle and Auntie. Big sister was ready to help.

We are so thankful to God that our kids love each other and enjoy spending time together. We don’t take that for granted. At the end of this full week together our daughter Katie and Andrew flew to Alaska for a weekend with friends to enjoy their friends’ new vacation home.

January was a full busy month for all our kids. Oh and our son-in-law started a new job, too, in January.

And now we say hello to February, a month filled with more love to enjoy!

Firsts on the Weekend

Driving back from Chewelah on Sunday we noticed a moose on the side of the highway. We turned around and hurried back to get another look.

We spooked it and it started running away.

Thankfully it stopped to take a look at us!

Our son thinks this was a young one!

On Saturday we spotted this critter on our back slope. We think it is a fox but it could be a coyote.

It’s coloring makes us think more fox than coyote.

This was the first moose we have seen since moving to Colville in 2018. Whether the other animal is a fox or a coyote it is a first sighting on our property of either!

Our yards are still covered with snow here and we have temperatures below freezing so not much melting happening.

Here we are on the last day of January. Is it just me or did January fly by?

Cheyenne to Billings and Home

Wrapping up our Land That We Love Tour with this post. On Saturday October 9th after we left Cheyenne we headed north on Interstate 25 with a cruise through Casper Wyoming ending up in Billings, Montana for the night.

It was a 455 mile drive. We filled up at Jerry’s Interstate Gas Station in Casper for $3.989. One of the highest priced gasoline on our trip. When we got to Billings we filled up the tank again at Costco for $3.149. On Sunday October 10th, on our last stretch to our home we bought gas again in Missoula at Costco for $3.299 and finally at our usual gasoline stop in Spokane, Washington at Costco for $3.489. Our drive from Billings to our home on Sunday was 609 miles. We originally planned to stop in Wallace, Idaho overnight on Sunday and drive the last stretch home on Monday the 11th of October but we were so ready to be home again we cancelled our night and headed straight home.

Here’s what we saw on our drive on Saturday October 9th.

After Casper I probably drove so photos ceased.

We arrived in Billings, filled up with gas at Costco, checked into Fairfield by Marriott for the night at $159.68. We freshened up and had one of the best dinners on our trip and I wrote a post about it here.

On Sunday early morning we packed up for the last leg of our journey home.

We made it home before dark and turned the heat back up and had a relaxing evening.

We are talking about where we should road trip next, Lord willing. Time will tell where and when. Thanks for following along with us. We do Love the USA and pray God will have mercy on our Homeland.

Truth for Today #4

Thursday January 27th

2 Timothy 2:22-26

So flee youthful passions and pursue righteousness, faith, love, and peace, along with those who call on the Lord from a pure heart. Have nothing to do with foolish, ignorant controversies; you know that they breed quarrels. And the Lord’s servant must not be quarrelsome but kind to everyone, able to teach, patiently enduring evil, correcting his opponents with gentleness. God may perhaps grant them repentance leading to a knowledge of the truth, and they may come to their senses and escape from the snare of the devil, after being captured by him to do his will.

Still Early Hodgepodge

Time again for Wednesday Hodgepodge! Thank you Joyce From This Side of the Pond for asking the questions!

1. January 25th is National Opposites Day. ‘They’ say opposites attract…do you agree, and if so is that a good thing? Or do you subscribe more to a ‘birds of a feather’ philosophy?

Getting really basic, in marriage opposites are a good thing, male and female. Our marriage started with a foundation of being the same spiritually, believing in God and being born again believing in Jesus Christ as our Lord and Savior. After 47 years of marriage we have grown more similar than different in our likes and dislikes. We have different personalities and a different skill set, which works well. Although we don’t isolate ourselves with only like minded people it is nice to have a haven of like minded people in the world of ‘differences’.

2. Something you’re glad to have behind you?

Formal schooling from Elementary through College.

Something you’re glad is ahead of you?

Continued learning experiences of life on this earth.

3. Your favorite hot food? Cold food? Are you a fan of breakfast for dinner?

I love food! I’ll go with soup for hot food. I’ll go with a cold cut sandwich with all the extras for cold food. I am a fan of breakfast for dinner!

4. Are you someone who always arrives to appointments/events early or do you tend to run late? Last thing you were late for?

Early, early, early. Hmm, hard to remember something I was late for. We did make it to a surprise party after the big surprise because the person who was being honored came early!

5. “What good is the warmth of summer without the cold of winter to give it sweetness?” John Steinbeck….Your thoughts?

Every season has so much to enjoy all on it’s own and sometimes the huge contrasts do make us appreciate each season’s special characteristics more. I’m so happy to live in a part of the country where there are distinct differences in the seasons. Some here say we have a fifth season…mud.

We are in a distinct Winter here with temperatures below freezing, snow still on the ground, and treacherous icy spots to avoid! We are a third of the way through Winter.

Cheyenne, Wyoming

After we checked out of our hotel on Saturday morning October 9th we drove to the downtown historic district to see what we could see.

Historic Whipple House located in the heart of downtown Cheyenne. This historic mansion was built in 1883 by Mr. Whipple and later sold to Mr. Lacy who was commissioned by President Author to begin the Wyoming territory. The 24 foot ceiling, old historic pocket doors, and craftsmanship remain in the home today.

The sign wasn’t really easy to read but this original bronze statue is on sale for $6000. This was in the front yard of one of the homes downtown.

On July 4, 1867 the first tents were pitched on the site now known as Cheyenne. Cheyenne means “aliens” or “people of foreign language.”

The City of Cheyenne had its beginning in 1867, when the Union Pacific Railroad came through on its way to the west coast. The town site was first surveyed by General Grenville Dodge and was named for an Indian tribe that roamed the area (originally called ‘Shey’ an’ nah’, belonging to the tribe of Alogonquian, the largest family of Indians on the North American Continent). Settlement came so fast that the nickname “Magic City of the Plains” was adopted.

The first Cheyenne Frontier Days happened in 1897.

We found our way out of Cheyenne as the sun rose. We traveled Interstate 25 north to Interstate 90 and Northwest to Billings on this day, 455 miles and Six and a half hours.

Kansas to Wyoming October 8th, 2021

We were on the road before dawn on Friday October 8th, 2021 on our Land That We Love Tour. On this day we traveled 549 miles which took us approximately 8 hours. Our original plan was to travel north to Nebraska and then west to Cheyenne but because of some road issues we changed our plans to travel west on I-70 with a northern jog once in Colorado then a west jog and finally continuing north on highway 85 into Cheyenne.

It’s time for some true confessions on some travel failures that we realized once home and doing further research on this area of Kansas. The reason we got off the highway for a while in Hays was to find Joe Bob Outfitters which we did and Dear made a purchase there. We also used the Home Depot for a pit stop. Now come the discoveries we made after we returned home and another discovery just this week. It’s not about Bob Dole, either, although it is interesting that Bob Dole was from Hays. This weeks discovery was that Dear’s mother Verna went to college in Hays! I was going through some of Verna’s papers this week and there were her college documents from Fort Hays Kansas State College!

If we would have traveled north through Hays and then west on highway 36 we would have gone through a few small towns where Verna’s Aunt Matilda (Dear’s Great Aunt Matilda) lived, (Oberlin, Kansas) and where Verna taught in a one room schoolhouse in McDonald, Kansas! Oye, we are kicking ourselves for missing that opportunity.

We stopped for gas in Seibert, Colorado at the Travel Plaza. Gas was $3.499 per gallon in Eastern Colorado. We also turned north here to jog up to Highway 34 and west again to highway 85 and north on 85 to Cheyenne.

The roads we traveled to get to highway 85 were desolate.

Always a good relief to reach our next destination safe and sound. We thank God for that.

We checked into Spring Hill Suites in Cheyenne where we paid $161.70 for our room. We ate at Sanford’s Cheyenne paying $42.14 before tip for a California Club Sandwich, a Cajun Chicken Sandwich and two drinks. The food was good.

Our Saturday travels on October 9th included stops in the historical area of downtown Cheyenne before we left town for Billings. Lots of photos in my next post.

Back to the present…

We spent Sunday January 23rd at home. We planned to go to church but when we pulled out of our drive onto the road it was so icy that our car didn’t want to go straight ahead. Slip, slip, sliding along we decided against our original plan. We very carefully turned around and into our driveway and watched our church service online. For the record, in person church is far better than online church.

The difference a day makes. We traveled on Saturday to Spokane and back home with no road issues. Whatever weather happened over night Saturday into Sunday turned our road into a sheet of ice. Monday the county will probably do some sanding since the school buses travel our road.
