A Glorious Day…

…culminating a wonderful weekend. Easter is my favorite day to celebrate. We had an overload of good things and this post will be full of photos!

On Friday I prepared our traditional sweet cheese spread to enjoy on our Easter bread. With the heavy rock in place to force the excess liquid out of the cheese mold it rests in the refrigerator for our Sunday celebration.

On our way to our Good Friday service on Friday evening we spotted this group of people who were following men bearing a cross. It was such an unexpected thing to see and we were inspired by this act of identifying with Christ.

On Saturday a crew arrived at the house to help with the Kulich, Russian Easter Bread. Katie arrived a little later to help, too, mostly with the Shrink Wrapped Easter eggs.

The dough was ready to go in the cans rise for the final time.

Into the oven they go.

Time to set the table while the bread cools.

I bought crosses made out of nails for each person to take home with them.

On Sunday after a great church service I added the last touches to the table while the lamb shoulder was slow cooking in the oven.

Besides the shrink wrap eggs we tried the rice dyeing method, too.

Lamb shoulder with a caper fresh mint sauce, caramelized potatoes with onions and rosemary, cucumber tomato salad.

For dessert, Russian Easter Bread (Kulich/Paska) with Seernaya Paska (Sweet cheese spread) and strawberries.

Our mom would be proud of our efforts this year. She loves a smooth top and no airy holes when you slice it.

After our filling lunch and dessert we decided to take a walk.

After our walk we enjoyed sitting on the deck in the sunshine!

We truly had a full to overflowing good time!

Now what I haven’t shared yet is that on Saturday my computer crashed. Oh my…that’s scary! Thankfully there was a repair system that we were able to access and everything is now backed up and restored. It took several hours to accomplish this but everything is up and running again.

Maundy Thursday

I took this photo 2 years ago at the Monumentale Cemetery in Milan, Italy. Today and this whole week Christians around the world remember the events that led up to the crucifixion of Christ and Christ’s resurrection over 2000 years ago. I always look forward to Easter week which is also called Holy week. Celebrating our risen Savior and what he accomplished for us  tops my list!

The Last Supper and the Washing of the Disciples Feet are both remarkable events. While in Milan I was also able to see Leonardo da Vinci’s mural of the Last Supper. The original mural is on a wall of the refectory (dining hall) in the Convent of Santa Maria delle Grazie in Milan, Italy. No photos allowed.

While in England last year we saw two amazing paintings of the last supper, one in the Parish Church of St. John the Baptist in Windsor and one in the chapel of Magdalen College.

The Thames 104 - Copy - CopyFrom the Lectern, look down the centre aisle and observe in the West Gallery a painting of The Last Supper. This is a national treasure. The picture was originally presented to the Royal Chapel c. 1660 by Brian Duppa, Bishop of Winchester, Prelate of the Order of the Garter. It was “bought by him beyond the sea”. Another tradition ascribes it to Franz de Cleyn (1588-1658), Rostock, Mecklenburg, Court painter to James I. It was rolled up and buried “in the plumery” (plumbers workshop?) in the Great Rebellion. It hung over the altar at St George’s, Windsor in 1702, and can be seen there in Sandby’s drawing dated 1786.

In view of the bad condition of the original fresco in Milan, Magdalen’s copy on canvas is a piece of increasing historic and artistic significance.

Excerpts from John chapter 13…

It was just before the Passover Feast. Jesus knew that the time had come for him to leave this world and go to the Father. Having loved his own who were in the world, he now showed them the full extent of his love.

Jesus knew that the Father had put all things under his power, and that he had come from God and was returning to God;  so he got up from the meal, took off his outer clothing, and wrapped a towel around his waist.  After that, he poured water into a basin and began to wash his disciples’ feet, drying them with the towel that was wrapped around him.

When he had finished washing their feet, he put on his clothes and returned to his place. “Do you understand what I have done for you?” he asked them.  “You call me ‘Teacher’ and ‘Lord,’ and rightly so, for that is what I am.  Now that I, your Lord and Teacher, have washed your feet, you also should wash one another’s feet.  I have set you an example that you should do as I have done for you.

“A new command I give you: Love one another. As I have loved you, so you must love one another.  By this all men will know that you are my disciples, if you love one another.”

Nadia’s (Mom’s) Kulich / Paska

What many of you call Paska we called Kulich growing up. This is my mom’s Russian Easter Bread Recipe that I quartered because the amount she would make is quite daunting for me. We have cut it in half in years past. Now what you need to know about my mom and recipes is that she ends up tweaking them from year to year so this recipe is for her Kulich from 2001. I have a 2009 and 2012 recipe, too. This one was easier to quarter. Here’s the link to the original. My dear mom passed away from this earth in September of 2013 so I cherish her tweaked recipes.

Ingredients:

2 pkgs rapid rise yeast
1/4 cup lukewarm water
1/4 cup lukewarm milk
1 teaspoon sugar

4 egg yolks
1 egg
1-1/4 cups sugar
3/4 cup butter
1 cup whipping cream
1 cup half and half
1/2 ounce apricot brandy
1-1/2 teaspoons powdered vanilla
1 teaspoon salt
Zest of half a lemon
About 2-1/2 lbs of flour, sifted (about 7 cups)
Vegetable oil to coat the rising dough

6 to 7 one pound or two pound cans for baking. You can use loaf pans or large muffin tins if you don’t have the cans to bake them in.

Add yeast to the lukewarm water and milk and sugar in a stainless steel bowl. Make sure the liquids are lukewarm. Let this mixture dissolve and sit.

Beat the egg yolks and egg together.
Cream the butter and sugar in the large bowl of a stand-up mixer.
Add the eggs to the butter and sugar mixture slowly mixing to combine and then beat to incorporate well.
Mix the half and half with the whipping cream and heat until lukewarm, not hot, and slowly incorporate into the creamed mixture.
Mix in the vanilla and brandy.
Add the yeast mixture and the salt and beat with a mixer.
Continue beating and add the lemon zest.
Continue beating and add the sifted flour about a cup at a time.
Once you cannot beat the dough any longer using the mixer, put the dough on a floured surface and start incorporating the remaining flour by kneading the dough.
The dough should be kneaded very well, approximately 10 minutes.
You should knead the dough until you can cut it with a knife and it is smooth without any holes.
Place the dough in a stainless steel bowl. Take some oil and pour a little on the dough and spread it all over the dough. Make sure to turn the dough so it is coated evenly.
Cover with plastic wrap right on the dough and a dish towel on top of that.
Place in a warm place away from drafts to rise. (My sister usually puts it into the oven that has been warmed slightly.

It is now time to prepare the coffee cans (1 lb. and 2 lb. cans are the best) Cut circles the size of the bottom of the cans out of wax paper. You will need four circles per can. Make sure the cans are well greased. Put the 4 circles in the bottom of the cans.

Use a empty and clean coffee can like the ones above. If there is a label make sure to take it off. If the can has a lip at the top you’ll need to use a can opener to cut the lip off the can. I hope these pictures will make the process easier to understand.

Cut sheets of wax paper long enough to line the sides of the can and tall enough to be 2″ above the rim of the can. Use Crisco to seal the ends of the paper.

When the dough has doubled in size, punch it down and turn it over.
Let it rise a second time until it doubles in size. Punch it down again.
Now the dough is ready to put into the prepared cans.
You will take a portion of dough about 1/3 the size of the can. Knead it and form it into a smooth ball that you can easily drop into the can.

Let the dough rise again inside the can until it is at least double in size.

Bake in a 350 degree oven until golden brown on top.(approximately 30 minutes or more depending on your oven.)

Let them cool slightly in the cans. Remove them from the cans and then cool completely standing up. Some people cool them on their sides turning them often to keep their shape. We found this time that they cool just fine and keep their shape standing up so we didn’t bother with that step!

I’ll be trying this Kulich/Paska recipe quartered at the end of this week. I’ll let you know how it goes and how many coffee can shaped loaves it makes. We got seven loaves out of this recipe although we shorted some of the cans.

Forty Days of Lent…

We are on the letter F for ABC Wednesday and it’s timely for Fat Tuesday and the Forty Days of Lent. Thank you to Denise Nesbitt and the ABC team.

Today is Fat Tuesday or Shrove Tuesday (feast of pancakes) which means tomorrow is Ash Wednesday. I did not observe Lent growing up but I had lots of Catholic friends in my schools and was always curious as to why they showed up with a black ash mark on their foreheads on this particular Wednesday. When I found out they were giving up gum or candy for Lent I was more curious as to why. So here’s a little overview of what all this means. This article from the Liverpool Echo really covers things well.

During my school days I made a decision to follow Christ. This was the beginning of my faith journey. This decision and my changing of allegiance has not cost me much compared to the 21 Christians who were savagely beheaded by ISIS just because they were Christians. My cost has been mild compared. I’ve been mocked at times, disregarded, and made fun of. Among some people who view themselves as intellectuals I’ve been considered brainless.

I’ve also received many benefits that far outweigh the cost. As my faith grows and I deny some of my own selfish desires I’ve received the fruit of the Spirit like love, joy, peace, patience, goodness, faithfulness, gentleness and self control. I fail a lot but I’m forgiven and I carry on in faith that God will continue to lead me and help me fulfill all I’ve been called to do. Each day I have to decide to follow Christ or follow me me me. Some days, many days, it’s all about me! Every day He is faithful.

When Dear and I were in Great Britain last year we visited Hereford Cathedral and I took photos of this Shrine that illustrates Luke 9:23.

And He said to all, “If anyone would come after Me, let him deny himself, and take up his cross daily and follow me.”

After a great Resurrection Sunday service we headed home to make preparations for our Easter meal.

 We had our kids, Josh, Laura and Katie along with my sister Lana and hubby Steve. Our son in law Andrew celebrated Easter at Camp Leatherneck in Afghanistan. We did hear that they had a Sunrise Service at the camp. Our son Dan is celebrating with his girlfriend’s family in Eastern Washington.

2014-04-20 Easter day2Our menu included rack of lamb, rice pilaf, salad and bread. For appetizers we had asparagus spears wrapped in prosciutto and broiled.

Easter eggs-table 057We had fun with special shrink wrap boiled egg Matryoshka embellishments that we found at the Ukrainian market. The eggs with the XB on them are hollow chocolate eggs. The X is for Christ and the B is for arose. Here’s the shrink wrap method. With eggs that have been boiled already, you put them in the sleeve and then dip them in boiling water for about 3 seconds.

Easter day 010The guys are out on the deck now enjoying the sunshine and the girls are inside enjoying relaxing on the couch while watching Property Brothers. After a busy rewarding morning and early afternoon it’s good to just sit and veg!

Can’t Imagine…

…the sorrow those who loved Jesus Christ felt on the day in between his death and resurrection.

I’m so thankful we know the rest of the story and we are not of those who despair.

In this you rejoice, though now for a little while, if necessary, you have been grieved by various trials, so that the tested genuineness of your faith—more precious than gold that perishes though it is tested by fire—may be found to result in praise and glory and honor at the revelation of Jesus Christ. Easters Past…

For my flashback this week I’m going back to Easters in the past. These are all from the 50’s. Later this month I’ll share Easter Flashbacks from our immediate family that hail from the late 70’s and early 80’s.

img604Growing up my immediate family was divided 4 x 4. My mom and dad had the four of us siblings pictured above and then there was a 7 year gap before they had 4 more children. I was the baby of the family for 7 years.

img643My mom had one brother who survived to adulthood and these are my cousins on my mom’s side of the family. This photo was taken of my maternal grandmother’s grandchildren at the time. She would add 5 more grandchildren in time.

img610I was so excited when I learned I’d have a baby brother or sister. I really wanted a brother and I remember jumping up and down on our family room couch when my father announced that my mother had my baby brother Tim. Tim was soon followed by our cousin Tanya and then our brother Steve. The twins, Leonard and Lana came a few years later.

img640This last photo is of my Dear and his older brother Terry. Dear and Terry were born 4 years apart. I’m guessing this could be an Easter photo but it also could be that it was just a Sunday going to meeting photo!

It was all about the Son and…

…the sun on Easter Day!

We celebrated the resurrection of Jesus Christ, God’s son early on Sunday morning and then came home to prepare for our Easter meal and the sun shone brightly on us.

I walked about the yard and brought in some color from my Forsythia and Lenten Rose.

We had our traditional lamb barbecue (Shashlik) and sides for our meal. We were so happy the weather was perfect for a barbecue.

I have a confession to make. I did not bake our traditional Russian Easter Bread (Kulich/Paska) this year.
When I was in Italy I saw these in all the grocery stores advertised for Easter and decided to buy one to bring home. It worked perfectly with a texture and aroma very close to Paska.
 

 

Lombardians came up with colomba pasquale (literally “Easter dove”) and its popularity spread throughout the country until today it is an unofficial national Easter bread.There are several stories about its origins. (We have to say “of course” again; we’re talking about poetic Italians, after all.) One version has the colomba dating back to 1176, commemorating the Lombardian victory over Holy Roman Emperor Frederick Barbarossa. During the deciding battle, according to this version, two doves representing the Holy Ghost miraculously appeared on the battle standards.

After our meal we headed out into the sunshine to enjoy some much needed Vitamin D!

For us fair skinned people a portable umbrella was needed to shield our skin from the hot rays! It’s a bit too early for our patio covers to go up here in the Northwest. We usually pull out the patio equipment for Mother’s Day weekend or Memorial Day weekend.

Here we are in April and today I’m checking the calendar to see what’s coming up. We have 2 weddings to attend, one local and one that involves travel the end of the month. We are also getting plans finalized for a 90th birthday party for my parents the end of April. How does April look for you?
