Tri-Tip Rub

When we lived in Southern California we experienced real good barbecued tri-tip roast. Tri-tip is a triangle-shaped piece of beef from the bottom sirloin. It’s also called a “Santa Maria steak” because Santa Maria, California is where it first became popular. You can barbecue it, smoke it, or roast it in the oven. What I’m sharing with you today is a good rub to prepare this cut of meat for whatever cooking method you choose. This rub recipe is enough for a two pound roast.

Tri-Tip Rub

  • 2 teaspoons salt
  • 1-1/2 teaspoons garlic powder
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon oregano
  • 1/4 teaspoon sage
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon herbs de provence or fines herbs (optional)

Mix all ingredients well and rub onto roast lightly coated with olive oil. Wrap the rubbed roast with saran wrap and let marinate for at least 4 hours or overnight in the refrigerator.

When ready to cook unwrap roast. We let it sit at room temperature for an hour before we cook it.
For the grill we place it in the middle of a 3 burner grill with only the outer burners on and cook it to an internal temperature of approx 145 degrees for a medium roast. We place it fat side down for a few minutes and then turned it over to cook it to completion.
If you cook it in the oven it’s good to have the roast elevated slightly and not sitting directly on the bottom of the pan. If you don’t have an appropriate accessory to elevate it off the pan you can use thick cut slices of onion. In the oven cook it fat side up at 350 degrees until it reaches the internal temp for the doneness your family prefers. We enjoy it at approx 140-145 for medium. Slice the meat across the grain and serve.

 

This is my favorite way to eat Santa Maria Tri-Tip.

Table Set for Nine

It was fun to plan for seven guests, two families, from our church on Tuesday evening.

Since the nine of us were together around the table for the first time we had name cards with a conversation question written in each place card.

I should have done the age math better because one of the questions was, “Where were you when John F. Kennedy was shot?” None of our guests were alive when Kennedy was shot!!

Thankfully the other questions were appropriate for the audience!

The dessert photo is the only photo that captured our guests at the table, sort of. Just as well since I didn’t ask permission to plaster their faces on my blog.

We had tri-tip, rice with raisins and almonds, pea salad (brought by a guest), southwest beans, and Strawberry Ice Cream cake for dessert.

We had a lively discussion even without the questions but it was nice to have a concentrated ‘listen’ to each of our guests voices while they answered their question.

Romans 8:1-5

Since You Asked…Hodgepodge

 

Getting my Hodgepodge done early on Tuesday. We’ll be busy Tuesday evening with some company around our table.

Merry-Go-Round or Carousel. Slow and steady with some ups and downs but mostly calm and content.

The salad police just caught me and they are taking me in for questioning!  We have moved into the habit of not eating salad. Maybe one salad a week. I like crisp salad greens with cucumber and tomato and a simple Persian dressing.

Tomorrow is our sister Vera’s 19th real birthday day. She was born on Leap Year! Happy 19th Birthday Vera. We’ll have to have a big ‘do’ for your 20th! (Hope we are all alive, then) I’ll be singing ’76 Trombones’ for you tomorrow.

No Winter Lasts Forever…

…No spring fails to appear.

Our last door wreath had seen better days so we picked this one on our last trip to HomeGoods in Spokane.

Last Thursday, Friday and Saturday we were able to spend time outside clearing some dead growth in several of our planters. We got a very good start but aren’t finished, yet. It was encouraging to see signs of Spring growth in those planters.

I changed up my plate hanger with these dishes, Dreamtown Made in England by Johnson Brothers. I have 4 dinner plates. They were a thrift store find.

Soon I’ll be pulling out the Easter bin and changing things up again with lots of Spring accents.

Potato Pancakes

These are an easy blender version of potato pancakes that we enjoyed recently.
Ingredients:

  • 3 cups frozen hash brown potatoes or 3 cups peeled chopped raw potatoes
  • 1/2 onion coarsely chopped
  • 2 eggs
  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3 green onions (scallions) chopped

Method:

  1. Put all ingredients but the green onions into blender container.
  2. Cover and blend, stopping to make sure all ingredients are getting chopped.
  3. Push down onions or potatoes with a spatula if necessary.
  4. Continue till blended well. Some coarseness of the potatoes and onions is O.K.
  5. Stir in green onions.
  6. Pour batter onto hot greased griddle. Brown then flip once to brown the other side.
  7. Serve with sour cream and applesauce.

We enjoy our potato pancakes with maple syrup or fruit syrup, also.

Family Highlights

Keeping up with some family highlights from before Valentine’s day until now.

Our ‘Coast kids’ celebrated a late birthday brunch for Josh way back on Sunday January 28th.

Katie made these yummy looking marshmallow fluff cream cheese filled chocolate dipped strawberries for Valentine’s Day. Don’t you think these would be a great treat for a tea, also?

These two got a much needed few hours together without their kids last Friday.

These two enjoyed a long President’s weekend in Mexico with two other couples who they’ve been friends with for 25 years.

And drumroll please! Addy completed her Awana book 8 weeks early and is now working through an extra credit book!!

She is able to recite all the books of the Bible!

I couldn’t leave JJ out so here he is with his sister enjoying the great outdoors on their property. He loves to be outside. He has recently mastered riding his bicycle without training wheels. We are all anxious for him to master using the brakes successfully on that bicycle, too!

The weather cooperated and warmed up enough for us to do a little work outside on Thursday afternoon. I was able to clear one large planter of dead growth. Woohoo! Only 10 more planters to go. The nice part of this process was that I spotted new growth under all the dead stuff. Today looks like a good day to tackle another planter. I usually do this in the Fall but those days got away from me.

Here we go into the last weekend of February. Hope it is a nice one for everyone!
