Paska, Easter Bread, Kulich

paska class 001Paska brought the Mennonite Girls Can Cook together and it continues to play a big role in our cooking story. This past Tuesday we taught a cooking class at Lepp Farm Market in Abbotsford, British Columbia (Canada) on Paska and a traditional Mennonite Easter meal. My daughter Katie had a ticket for the class and she was able to be our photographer as she watched.

So much was going on this evening at Lepp’s and I’ve created some collages of the different parts of the class.

2014-03-26 paska class1Paska, it’s what’s for Easter!

Paska is a slightly sweet Easter yeast bread that is traditional in the Ukraine and Russia. My Russian relatives call this bread Kulich. My mother and relatives always made dozens of loaves in the cylindrical shape using coffee cans or large juice cans.

2014-03-26 paska class9Lots of work goes on behind the scenes right up until Lovella introduces us to the guests and gets the evening going. Judy and Kathy helped coordinate this class and had all the timing and shopping lists ready ahead of time along with recipes to hand out to our guests.

2014-03-26 paska classLovella showed us her process in getting the dough ready to rise for her Paska.

2014-03-26 paska class3Julie talked about the products that make gluten free baking easier these days. She prepared her gluten free Paska and brought it to the class to share. She also demonstrated a delicious mustard sauce for the Easter Ham we would be serving.

2014-03-26 paska class5Kathy demonstrated her Cheesy Scalloped Potato recipe and also showed the ingredients she uses for a gourmet scalloped potato recipe.

2014-03-26 paska class2Judy demonstrated her delicious coleslaw dressing and mixed up a large batch of fresh coleslaw for the class. My daughter Katie is not fond of store bought coleslaw. She really enjoyed Judy’s homemade variety!

2014-03-26 paska class4Bev demonstrated how to make Pluma Moos or Plumi Moos. This is a traditional fruit dish served in Mennonite homes at Easter and other holidays, too. It can be served cold or warm. People use different varieties of fruit for the dish.

2014-03-26 paska class8Bev also demonstrated how to carve a ham with the bone in. She really did a great job.

While we started plating the food for our guests Lovella started working on her dough that had been rising during these demos.

2014-03-26 paska class7She showed us a variety of pans that you can use and how to pinch off small portions for sweet little petite paska buns made in muffin tins. She also showed a loaf variety and a twisted loaf.

2014-03-26 paska class6I had brought a completed Seernaya Paska (Сырная пасха), sweet cheese spread from home since it has to sit in the refrigerator having all the liquid pressed out for at least 24 hours. I plated it and showed one of the flower pots I use to mold the cheese and the heavy stone wrapped in plastic wrap to weight the cheese and force the liquid out. We used fresh viola blossoms to decorate it. I made an error in the pronunciation of this dish in our first cookbook. It is called seernaya paska not seerney paska . I’ve always had a hard time with Russian grammar. Growing up we always had this spread to serve with our Easter bread.

Lovella finished off the demonstrations showing us how she makes the Paska Icing.

2014-03-26 paska class12

While our guests ate their main course of ham with mustard sauce, cheesy scalloped potatoes, and coleslaw. We started plating the paska, sweet cheese spread and a dollop of frosting to serve. We also served up a small bowl of pluma moos.

paska class 311These classes are always so much fun to participate in. The wonderful thing is knowing that the profit generated from our classes goes to Matthew’s House in Abbotsford. Lepp Farm Market partners with us in donating the profits from our classes to this worthy non-profit that is a respite home for children with complex health care needs. You can see and read about Matthew’s house here.

2014-03-26 paska class10

paska class 005Because the class was all about Easter I have to explain what the X and B on my Russian Sweet Cheese Spread is all about. On Easter the greeting that we always express to one another is

Christos Voskress! Voistinu Voskress!

Христос Воскрес!

Воистину воскрес!

Christ is Risen!

Truly He is Risen!

So the X (the first letter of Christ in Russian) stands for Christ and the B (the first letter of risen in Russian) stands for Risen, Christ is Risen. This is what Easter is all about.

2014-03-26 paska class11I stole this next photo off of Kathy’s blog. Hope it’s ok, Kathy. If you click here you can see Kathy’s post about our time. Here’s Katie getting ready to take photos of the class.

Lepp Kt

Katie and I wrapped things up and hit the road back to the U.S.A. at about 9:30 P.M. We were happy to make it home at 11:40. I’ll admit that I was a zombie on Wednesday and I might or might not have spent the whole day in my robe.

All the recipes for these dishes are in our cookbooks or on our blog.

Delicious…

…if I have to say so myself.

salsa - croissant 001

For a close up of this Avocado Mango Salsa and the easy recipe head over to Mennonite Girls Can Cook.

We had to cancel our small group meeting tonight due to the lingering bug at this old house. I feel quite unmotivated to do much of anything. Hope you are all well and the weather is improving where you are. We are in a steady rain pattern with threats of flooding and mudslides.

Joining Many…

…in praying for the troubling situation in the Ukraine. Personally the Mennonite Girls Can Cook have an ongoing relationship with The Good Shepherd Shelter that is located in the Ukraine.

daffodils 011

All of our author royalties from our first book have been designated for the shelter and we’ve been able to build a greenhouse where they are already growing food year round for the shelter.

We also are waiting news of a pending adoption of an orphan from the Ukraine. We just don’t know how the tensions and uprisings and invasions will effect the shelter or the adoption process but we do know the God who loves orphans. We know that He knows and He is sovereign. Praying for a peaceful resolution and that the country will be able to move forward without more bloodshed.

Matthew’s House

Inspired by the life of a young boy named Matthew, Matthew’s House is a respite care home for children living with complex healthcare needs. Up to five children at a time are cared for in a state-of-the-art residence staffed by experienced caregivers. Medical necessities like overhead track systems for transferring and full wheelchair accessibility will be complimented by a beautiful aesthetic, a multi-sensory playroom and an outdoor playground. Overnight guest suites allow family to remain close while taking a restful step back to refuel themselves.

2014-02-11 Matthews house7The playground area was very impressive with a soft cushy surface and lifts and designs that allow easy access for wheelchair bound children. The slides are equipped with rollers so the kids can slide down without physical effort. Swings that you can lay down on and a merry go round flush with the surface to be able to wheel a wheelchair onto and spin the child while in their chair.

Providing families with the support they need, Matthew’s House is about caring for kids, a community encouraging one another, hospitality, compassion and joy. One-hundred percent of the funds for Matthew’s House come from the generous support of individuals and community partners. The Mennonite Girls Can Cook have partnered with Lepp Farm Market in donating all the proceeds from our cooking classes at Lepp to Matthew’s House. Each of these leaves on the wall forming a large tree represent the many contributors to Matthew’s House.

“Rob and Charlotte Lepp, owners Lepp Farm Market and the women of the Mennonite Girls Can Cook (MGCC) blog/cookbooks have raised nearly $25,000 to stock the kitchen at Matthew’s House and keep it cooking. It is a unique relationship that marries a love for good food and a
generous spirit.”

Matthews house 042Here are 7 of the girls along with Rob and Charlotte Lepp in the kitchen that we have helped to build and equip.

2014-02-11 Matthews house8What a privilege to be able to contribute to the needs of these families dealing with children with complex healthcare needs.

Matthews house 024Our private tour of the facilities renewed our vision and encouraged us to continue our partnership with Lepp Farm Market with our cooking class donations going to Matthew’s House. Our next cooking class will be on March 26th, Paska, Pluma Moos and Easter Dinner. Click on the link to see how to register for the class.

It’s Thursday and we have sunshine and beautiful skies while many of you are suffering winter storm conditions yet again. Hope you are safe. What are your plans for Valentine’s Day? We are going to have our meal in. Dear volunteered to barbecue some steaks and I’ll add some baked potatoes and a salad for our meal. Maybe we’ll watch some Olympics or another episode of Midsomer Murders on Netflix. Hope whatever you do that your home is filled with love.

But the Greatest of These is Love

When God brought the Mennonite Girls Can Cook together little did we know the doors He would open for us to share His love with others and with each other. Yesterday was a day filled with examples of how powerful God’s love and purposes are and what it can do for a small circle of people and extend to the greater community and the world.P1030469

My 220 mile round trip drive up to Abbotsford and back was worth my time.

About thirty minutes into my drive I realized I had left my passport at home and was happy that I had gone to the trouble of getting an enhanced license. It worked great going into Canada and coming back. When I walked up to Lovella’s door I was greeted by Anneliese and Lovella with their cameras in hand. Of course I pulled mine out and started taking photos, too. Lovella’s table was set beautifully for us and the aroma of the food she and Anneliese had prepared set the mood for our celebration.

2014-02-11 Matthews houseThe 4 Chilliwack girls arrived and we sat down for our delicious meal starting off with Anneliese’s Roasted Red Pepper soup (which I forgot to take a photo of). Lovella made a quiche with fresh laid eggs from her farm and an amazing layered salad with greens, papaya, avocado, strawberries, onions cut big enough just in case we wanted to discard them and a tasty home made avocado dressing.

2014-02-11 Matthews house3Lovella will be sharing the recipes soon on our blog.

2014-02-11 Matthews house2We missed Bev, who is out of the country with her hubby on a business trip and our Winnipeg girls, Charlotte and Betty. I borrowed stole this next photo from Anneliese’s blog.

Judy made a special Valentine’s day dessert treat for us and because 2 of our girls have February birthdays she brought something special to light their desserts up!

Matthews house 019Happy February Birthdays to Marg and Lovella!

2014-02-11 Matthews house4Aren’t these desserts in a jar sweet! What a fun surprise to have them come out of Judy’s Tupperware tote and placed on Lovella’s plates and her mom’s vintage paper doilies from years ago.

The main reason we got together on this day was for a special tour of Matthew’s House in Abbotsford which was scheduled for 2:30. We’ve played a small part in making this dream come true. I will share more about Matthew’s House tomorrow. The house that love built…

We were going to meet at a restaurant for lunch before our tour. We all appreciated meeting at Lovella’s home instead where we could have a more intimate time together. Thank you Lovella for thinking of that and opening your home and table to us.

I made it to the border close to four for my trip home and had a fun chat with the U.S. Border agent. I wanted to give both the Canadian and U.S. agents I encountered this day a Gold Medal for doing their job cheerfully! I was home by six with just one nasty back up close to home. I’m always thankful for the ease of travel from my home to Canada.

Favorite moment of the night…laughing about Anneliese’s good old pans!

2013-12-05 Cookie Class10

When everything was said and done each guest at the cooking class got to take home one of these beautiful baskets of cookies the the girls had prepared ahead of time! All profits from last nights cooking class will be going to Matthew’s House in Abbotsford a non-profit help to families of children with disabilities.

Lovella took this next photo of Katie, my personal photographer for the evening. It was wonderful to have a traveling companion for the 200 mile round trip to the cooking class.

I managed to get one photo of my personal photographer before the class when we stopped for tea at Clayburn Village Candy shop where we had a lovely meal and we shared sticky toffee pudding for sweets before the sweets!

Dear and I are headed North again today. I’ll share more tomorrow on our adventure. I’m real happy someone else will be doing the driving the next couple of days.

Hope you all are enjoying some sweet moments in the bustle of this joyful time of year! Blessings…

The Three Birds Pub…

…or Public House. All secrets will be revealed and all projects will finally be shared from the mysterious sewing and planning for this evening of “Celebrating” good friends and good food.

Pub Night 034

We had a wonderful time at a “Thank You” celebration at this old house Pub on Sunday November 10th. We wanted our friend from England (who now lives in Washington) to know how much we appreciated his offering of his parent’s home in Porthtowan to us this past September. He not only offered their home but also gave us some great recommendations for things to do while we were there.  Our guests were very surprised when they arrived to our house Pub on Sunday!

2013-11-10 Pub Night1

We decided to name our pub “The Three Birds” because of the 3 birds on our stained glass window.

Pub Night 036

The reader board is from a business our son Josh had when he was in high school. Dear spray painted one side of it with chalk board paint that you can buy at craft stores. We used Union Jack duct tape to frame the chalkboard and frame some other signs that we made for the evening. Our daughter in law, Laura, did all the printing on the chalk boards. The printing on the signs were my effort…oye.

Pub Night 035

In England a lot of Pubs have Beef and Yorkshire pudding as specials on Sundays so we decided to do the same since our meal was on a Sunday, too.

As you stepped into ye olde pub you were greeted with various scarves from English premier league futbol (soccer) teams.

2013-11-10 Pub Night

2013-11-11 Sticky Toffee1

We had lots of fun with our signage…

2013-11-11 Sticky Toffee

We carried the bird theme wherever we could. These sweet birds were in a flower basket that Josh and Laura gave me for Mother’s Day symbolizing my 3 little birds that are all grown up now.

2013-11-10 Pub Night2Laura printed the names on the place cards, too. See the bird place card holders?

Pub Night 045This was another Chalk Paint project that Dear painted for me. I bought the white photo frame from Michael’s on clearance for $11.88. I liked the shape of the wood frame. Dear took the glass out of the frame and spray painted it with the Chalk paint. We let it dry and waited a few days before we treated the chalk paint as directed by rubbing chalk all over it and then wiping it off. Now it was ready to go. I stuck on the stickers and Laura printed out the menu.

Pub Night 013

These banners were some of my sewing experiments. The front banner is just a short twine tied between our island pen lights with 3 of the 12 napkins I made for the table. There were only 9 of us at the table so I used these 3 to fill in the air space in our kitchen/eating area trying to cozy things up to look more like a pub. I’ll be brave and show more close up detail on my sewing efforts at the end of the post.

Pub Night 025Each place setting had a poppy broach that I made by cutting off individual poppies from a bouquet stem of poppies that we bought at Hobby Lobby. I used wire cutters to do that and then attached stick on pin fasteners on the backs so they could be pinned on easily, or not so easily as it turned out. The reason we decided on the Poppy broaches was to commemorate Remembrance Day/Veteran’s Day since our time together was on Veteran’s Day Weekend and Poppies are worn extensively in England during this time.

Pub Night 010

The centerpiece was filled with some items that we would see on pub tables when we were in England and some things I added. I wanted to use as much pewter as I could.

Pub Night 011I used pewter mugs that Dear and I bought in England in the early seventies for our flower arrangements.

Pub Night 018

The napkin rings were silver tea pots. All the plates were made in England. I used a combination of three different blue and white transferware.

Pub Night 012

Pub Night 048

2013-11-11 Sticky Toffee2

These are the rough cut napkins that I made from a yard and a half of British themed fabric. I was able to get 12 napkins from the yardage I bought. I trimmed the runner with some bias tape I found in my MIL’s old sewing box. I also used bias tape for the little triangle cut outs that were left over from my original Pub banner.

Faerie - banner 003

Now to the most important reason for our evening…our guests!

Pub Night 058

The lovely ladies with their poppies on. Left to right, Katie, Laura, Gwen, Terri, and Sophie. Terri and Gwen are sister in laws. Terri is married to Gwen’s brother Luke. Luke was too sick to be able to join us. Sophie is one of Terri and Luke’s daughters.

Pub Night 061

Our guest of honor Gabriel with his wife Gwen and Josh and Laura. It was fun to share our England experiences with our friends and to thank Gabriel in person for his generosity to us and his great suggestions on what to see and eat in Cornwall.

Last but not least was our dessert.

Sticky Toffee 017Sticky Toffee Pudding. I will be posting the recipe at Mennonite Girls Can Cook on Wednesday, November 13th.

Sticky Toffee 009

We said farewell to our guests with our stomachs full and our hearts full. A most wonderful evening. Our kids helped us clean up and we went to sleep content with visions of Prime Rib and Yorkshire pudding dancing in our heads. If you want a tried and true recipe for Prime Rib and Yorkshire Pudding for your Christmas Holidays this year make sure you order one of our Celebrations Cookbooks. If you gift someone with this book you are also gifting children in Kenya who need clean water to live well. All of our author royalties go to this cause.

Sticky Toffee 013For the next couple days I think I’ll sit with my feet up and enjoy this book that I first heard about on Vee’s Blog, A Haven for Vee.  It finally arrived last Saturday. We ordered it before we traveled to England! What is on your schedule this week?

I’m linking up to Cuisine Kathleen’s Let’s Dish. As soon as her direct link is up for this week I’ll add it to my post. It’s been a long time since I’ve been able to link up. Looking forward to seeing what’s going on in Dish world!!

Seattle’s All a Buzz!

You could literally feel the excitement coming from people as Laura and I walked into the Century Link Stadium on Saturday night. There was to be a “huge announcement” before the game and they asked everyone to make sure and be in their seats at 7:15. We complied because we heard rumors and wanted to see if what we heard would be true and it was…

Clint Dempsey

Clint Dempsey is now a Seattle Sounder!

“Dempsey, the captain of U.S. national team who was purchased from Tottenham of the English Premier League, joins a Seattle team that is getting healthier, hungrier and hotter.”

“Going into the season, I thought I was going to be at Tottenham,” Dempsey said, “but MLS and the Seattle Sounders, they moved mountains to get me here. I am excited to be back in America.”

OK…I realize not all my bloggy friends are Soccer fans and some of you won’t even recognize his name but this is a huge development for the Sounders team and it was so much fun to witness and especially hear the excitement on Saturday night when Dempsey peeled off his hoody and revealed his new Sounders jersey.

In case you are wondering why it was just Laura and I walking into the stadium, Josh is at Lakeside Bible Camp directing the junior high camp for this week. Laura was busily texting him with the news that the Clint Dempsey signing rumors were true. Josh was very excited about two of his favorite things on Saturday…Soccer and Lakeside Bible Camp.

Home front news:

My mom has decided to go off oxygen and morphine so as of Sunday the oxygen has been removed from my parents apartment. My brother served my mom and pop communion on Sunday evening and several of us were able to google hangout to be part of the evening at the apartment. We sang together and prayed together. My mom is still very alert and she continues to make us laugh with her down to earth comments. The dialogues between her and my pop are priceless. Our nephew Caleb is getting married this coming Saturday in Gaviota, California so mom and pop in their words are “putting off dying till after the wedding” they call the wedding a detour from dying. We have enough material from our dear parents to make a mini-series.

mail.google.comMy mom with niece Melissa on Sunday. My mom said “I like this gadget”.

From the eternal to the mundane…our floors are now ready to receive their new padding and carpeting. What interesting room landscapes we are living with for a couple days. 2 queen mattress sets are stacked where our dining table usually sits. Fun times! Even with this configuration we enjoyed a wonderful Copper River Salmon meal last night with my sister and her hubby. Before their softball game Lana asked if she could drop off all the supplies for dinner so Dear and I could cook it for the 4 of us while they fulfilled their team duties. Little sisters can make those kinds of requests. I did reply to her “what do you think I am, a Mennonite?” She replied, “yes, I heard you were adopted in.” So there you have it. And because our garage is full of our other furniture which made our barbecue impossible to retrieve I cooked the salmon on the deck in an electric skillet…if that’s not a Mennonite alternative cooking method I don’t know what is!? We had salmon, black rice, broiled asparagus-zucchini and a cucumber heirloom tomato salad. Delicious. Chunky Monkey Ice Cream for dessert.

How was your weekend?
