Applesauce-Raspberry Jello
1 – 3oz. pkg. raspberry jello
1 cup hot water
1 – 10oz. pkg. frozen raspberries
1 – Cup applesauce
1 – Cup sour cream
1 – Cup miniature marshmallows
Dissolve Jello in hot water. Add frozen raspberries and blend carefully. Add applesauce. Pour into 9-inch square pan. Chill until set. Combine sour cream and marshmallows and spread over top of set Jello. Cover and Chill. Serves 6-8. I have doubled this recipe and put it in a 9 x 13 pan. Refreshingly cool salad!

I have some frozen raspberries in the freezer, and I think I’ll try this. The kids love anything with jello and fruit.

My folks at the Senior Center would/will LOVE this! I will let you know what their comments are … they get tired of hospital Jello 😉 you know lime jello and pears that are so tough you can hardly eat them … Ellen, you always have a nice pic to display with your topics which makes them enjoyable …

What would you guys serve this with?

Mummymac, That’s a great question. It could be a dessert, also, but it really goes well with savory items. In the past I’ve served it with ham and it gives the right balance to the saltiness of the ham.
Funny, we made the same thing growing up… EXCEPT, we never had that topping. I am thinking four kids + a marshmallow topping would be a big hit.

Kim, Thank you. When I bought the marshmallows for this, my 21 year old daughter grabbed the bag and ate them plain. Marshmallows are a great addition to jello!
