I found this wonderful recipe in the Better Home and Gardens Hometown Cooking February 2000 edition. I tweaked a couple things.
Mexican Corn Soup (prep: 15 min. Cooking: 10 min.)
1 – 16 ounce pkg. frozen whole kernel corn, thawed
1 – Cup chicken broth (I used the whole can of chicken broth and just 1 cup of milk instead of two so I wouldn’t have a half a can of broth left.
2 – Tablespoons butter or margarine
1 – 4-1/2 ounce can diced green chili peppers
1 – clove garlic, minced
1 – Tablespoon snipped fresh oregano or l tsp. dried oregano, crushed
1/4 – tsp. salt
1/4 – tsp. ground black pepper
2 – cups milk (I used one cup see chicken broth above)
1 – cup chopped, cooked chicken
1 – cup chopped tomatoes (I used a can of diced tomatoes w/jalapeno, med/hot)
1 – cup shredded Monterey Jack Cheese (4 oz.)
cilantro as garnish if you like it
[The soup is great with the full can of broth and tomatoes. I do not like half cans left over. ]
In a blender container combine half of the corn and the chicken broth. Cover; blend until nearly smooth.
In a large saucepan, combine corn puree, remaining corn, butter, chili peppers, garlic, dried oregano (if using), salt, and black pepper. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes. Stir in milk, chicken, tomatoes, and fresh oregano (if using); heat through. remove from heat. Stir in cheese until melted. Sprinkle with fresh parsley if desired (this is where I substitute cilantro instead)

Maybe you can help me out with something…? I want to order all of my food online from now on because of various reasons, but I don’t know where to go for quality food. I have tried 2 companies so far, Fresh Dining, and and Celebrity Foods, but I wanna get others I can try out. Do you know of any? The main thing I’ve ordered so far is steak. I guess you can say, I’m a steak junkie. LOL!!! From what I have found out (from what I have ordered so far) I think I am able to regulate the quality of beef I buy. I hate going to a store and getting that crappy slab of beef that I have to cut down until there is like nothing left. Hahaha!!!! (its so true though) Anyhow, sorry that I made this comment so long. If you can help me out or point me in a direction where I might find more quality foods online, I would greatly appreciate it. Have a good day or night! (depending on when you read this) LOL!!!!
Leo, I really don’t have any great tips for you. I buy my food at the local grocery stores and costco. I do know some people who do farm share. You might want to google that and see if anyone in your area does it too. I think you go in with a group of people and then you get a box of fresh organice vegetables, eggs, etc. I hope you find what you’d like.
I loved the soup at it’s title. I sucked in my drool and kept reading and then I got to the bottom of the post and saw your mom’s borscht recipe and I am regrettting not picking up borscht ingredients at the market today like I considered doing. We are having some pea soup though. That’s pretty yummy too.
